Herby Dripping-less Gravy
With Thanksgiving right around the corner and most people are not celebrating with huge feasts like normal years, a big Turkey is probably out of most people’s sights this year. Now with no turkey, that means no drippings to make a traditional gravy, but no worries because this herby dripping-less gravy is TO DIE FOR. Sautéd onions, garlic, shallots, and fresh herbs blended into a thick buttery broth does more than the trick when paired with creamy mashed potatoes or a small turkey breast. It may start out as a chunky gravy but once you pop that sucker into the blender, you will get that creamy texture we know and love from a traditional gravy. Plus this is a perfect gravy recipe that you can make a couple days ahead of the big day!
This recipe is dairy-free and can be made vegan if you decide to do a vegan broth, and vegan butter (I used Miyokos Vegan Butter for this recipe)! Let’s get started!
INGREDIENTS:
2 TBSP Olive Oil
3 TBSP Butter
1 Onion, diced
2 Shallots, diced
3 Cloves Garlic, minced
1/8 C Parsley, finely chopped
3 Sprigs Oregano, finely chopped
6 Sprigs Thyme, finely chopped
5 Sage Leaves, finely chopped
1 TBSP Salt
1 TSP Pepper
1 TBSP Garlic Powder
1/2 C Butter
1/4 C Flour
2 C Chicken Broth
INSTRUCTIONS:
1. Heat medium-sized dutch oven over medium-high heat.
2. Add olive oil and butter and let heat up and butter to melt.
3. Sauté onion, shallots and garlic for about 5 minutes. Stirring occasionally but letting veggies get a golden brown color.
4. Add in fresh herbs: parsley, oregano, thyme, and sage. Stir together and let flavors meld together for about 3 more minutes.
5. Add salt, pepper, and garlic powder.
6. Add butter and flour, then let thicken.
7. Add chicken broth and stir.
8. Turn heat to high for about 3 minutes then bring down to a simmer. The gravy will continue to thicken here for about 1 minute.
9. Scrape bottom of pan to get excess off of the bottom then place gravy into a blender. Blend until it has a smooth consistency.
10. ENJOY!
Notes:
* Instead of using a blender, you can use an immersion blender to blend but it may not be as smooth as you would like the final product to be.
* Use vegetable broth instead of chicken broth to make this vegan.
* If you do not have fresh herbs, you can use dry herbs but it may change the flavor slightly.
* Continue adding more broth if you want a more watery consistency but do not add until after step #8.
