Snickerdoodle Banana Bread
Does anyone else sing Hollaback Girl by Gwen Stefani every time you have to spell the word BANANA because I definitely do… LOL
Throughout this quarantine, banana bread has been a hot commodity for some odd reason. I definitely jumped on the bandwagon not even realizing that I was. I have probably baked about five or six loaves since the beginning of this whole shutdown, though I do not regret any of my loaves! ☝🏼Plus you can do SO much with banana bread to spice it up! This time I decided to make it into a Snickerdoodle version which was a super easy little adjustment I made to spice it up! What I did was whip up the normal recipe and put it into my greased up loaf pan. Next I made a cinnamon sugar mixture and covered the top with a layer of that to mimic a snickerdoodle vibe. It was definitely a great adjustment and I highly recommend!
I usually tend to make banana bread when I find that the bananas on my counter have started to develop some dark spots because I neglected them. I am super picky when it comes to eating bananas and I will not eat them if they have bruised like at all. I know it is terrible, BUT I try not to waste them and that is where all the banana bread making comes is handy! Don’t forget to bookmark this recipe so you can try it for yourself! INGREDIENTS:
3 VERY ripe bananas, peeled
1/3 C melted butter
1 egg
1 TSP vanilla extract
1 TSP baking soda
3/4 C sugar
1 1/2 C Flour (I used Bob’s Red Mills White Unbleached)
1/4 TSP Nutmeg
1/2 TSP Cinnamon
2 TBSP Sugar
1 TSP Cinnamon
INSTRUCTIONS:
1. Preheat oven to 350 degrees.
2. Grease loaf pan (9” x 5”). I used spray canola oil, but you can also use butter!
3. In a mixing bowl, mash bananas until fairly smooth (I mash with a fork)
4. Add egg, melted butter, and sugar. Stir. (now I switch to a whisk)
5. Now add dry ingredients. Baking soda, sugar, flour, nutmeg, and cinnamon. Stir.
6. Pour batter into loaf pan.
7. Make snickerdoodle topping. In a small bowl, mix sugar and cinnamon.
8. Layer snickerdoodle topping over the batter in the loaf pan.
9. Place pan in the oven and bake for about 40 minutes. depending on your oven it may run hotter or cooler so just keep an eye on the bread. I always have to bake for an extra 2-3 minutes. When I place a toothpick into the bread to see if it is done, I like the middle to be slightly undercooked because when I take it out, I know that it will continue baking when it is cooling down.
10. Let it cool completely before taking it out of the pan and ENJOY!
