Pan-Seared Tilapia w/ Vegetable Broth

So this little meal came to me while I was on the brink of ordering Doordash  Sometimes you just craveeee someone else’s cooking and there I was scrolling through restaurants near me when I realized I actually had two nice pieces of Tilapia in my freezer! I decided to save the money and whip up this little dish instead! And let me tell ya... it was a delicious surprise the way it turned out! Don’t let this dish intimidate you and try it for yourself!

INGREDIENTS:

Fish:

Olive Oil

2 TBSP Butter

Sea Salt

Ground Pepper

Broth:

2 TBSP Butter

1/2 Yellow Onion

3 Garlic Cloves, minced

1 Yellow Squash, quartered

1 14 oz can Petite Diced Tomatoes

2 C Chicken Broth

1/4 C Spinach

1 TSP Red Chili Flakes

1 TBSP Dried Basil

Sea Salt

Ground Pepper

1/2 Lemon, juiced + slice for garnish

INSTRUCTIONS:

  1. Heat up olive oil and butter in a medium to large pan over medium-high heat.

  2. Add salt and pepper to both sides of the fish, then add to the pan. Sear both sides of the fish for about 3 minutes on each side. Once cooked fully, remove from heat and set fish aside.

  3. Turn heat to medium-low and add butter. Next, add onion and garlic and continue to stir until onion becomes fragrant and translucent.

  4. Next, add yellow squash and continue to stir occasionally.

  5. Add some more salt and ground pepper.

  6. Next, add diced tomatoes and chicken broth then bring to a boil.

  7. Once broth is boiling, bring it back down to a simmer. Add red chili flakes, spinach, and dried basil then cover and let simmer for about 5 minutes.

  8. Next, add the cooked fish to the broth and let simmer for about 3 minutes so the fish can absorb the flavors from the broth.

  9. Add the lemon juice, serve, and ENJOY!
